When friends said to me Sandia Chili Grill had gluten-free meals on their menu, I was there in about five minutes, literally. I have not had Mexican food in an Albuquerque restaurant since I started eating gluten free, and I wanted to see if this was really true.
The first person I saw upon entering Sandia Chili Grill was Mick, one of the owners. He was very familiar with the requirements of the gluten free diet and patiently answered all of my questions about how the food was prepared and the ingredients used. The process to prepare a gluten-free meal is well defined and preventing cross contamination is part of their normal procedure. All the food is prepared onsite using fresh, not processed, ingredients. Xantham gum is the only thickening agent used. Customers can watch their meal being made, and I watched Mick clean the grill before he started preparing my food.
I ordered the cheese enchilada meal. By the time Mick handed it to me, we’d been talking for a while and the food smelled so good that it took extra effort to wait for my husband to complete his order for a breakfast burrito. My meal included two cheese enchiladas smothered in green chili, grilled potatoes covered with red chili and beans. Every mouthful made me realize how difficult it has been to live without New Mexico style Mexican food these past few years. It was an incredible meal and the amount so generous that I was able to enjoy it for lunch the next day.Customers who want to order gluten-free foods that are fried need only call in advance. A separate container of oil will be heated for your meal and ready for use when you arrive.
